DINNER BY HESTON BLUMENTHAL

Dinner, one of the city’s most anticipated openings, is now widely considered one of the country's best restaurants. Paying homage to historical British cooking, the menu reclaims traditional dishes dating back to the 16th century, reinventing them for the modern day. The menu lists dishes with the year they were first cooked, creating a unique connection to the country's rich culinary tradition. Fans of Blumenthal’s molecular gastronomy will enjoy the signature ‘Meat Fruit’ while the crowd-pleasing triple-cooked chips retain a place on the menu almost three decades after he first pioneered the dish.

HÉLÈNE DARROZE AT THE CONNAUGHT

This three Michelin-starred restaurant showcases the talents of renowned French chef Hélène Darroze. Celebrating its 10th anniversary in 2019, the restaurant closed for two months to undergo a total refurbishment. Not only were the interiors modernized, but so was the menu. It reopened with a new a la carte offering that emphasized British producers more but retained odes to her classic French training. The British-themed offerings include caviar with langoustine, oyster, and runner beans and Denbighshire pigeon with beetroot, wild blueberry, and Mexican molé.

We recommend–the lobster from Cornwall with tandoori spices, carrot, citrus, and coriander; and the veal Correze with cauliflower, Carlingford oysters, Oscietra caviar and capers.

HIDE

Hide is London’s new kid on the block regarding fine dining. It has become one of the best restaurants in the city, and its reputation was sealed after receiving its first Michelin star six months after opening. The restaurant is an innovative concept split into three distinct areas: Above, Ground, and Below, with a selection of stunning private dining rooms. Hide Above’s menu changes often, but the signature dish is the nest egg, an eggshell filled with egg yolk, smoked butter, toasted mushrooms and cream.

We recommend–starting with Beluga caviar served with crème fraiche, chives, pickled shallot, and toasted crystal bread. Then, move to roast Huntsham farm suckling pig, mustard fruit puree, crushed turnip, and homemade black pudding. Finally, share the 50-day-aged short-horn beef ribeye cooked over charcoal, served with crispy potato cakes, baked shallots, virgin rapeseed béarnaise, and a salad of land cress, smoked tomatoes, and Parmesan.

The eatery offers haute cuisine in a plush setting of studded ivory leather walls, ornate plasterwork ceilings, and rich furnishings in purple and crimson. Diners can choose between a seven-course tasting menu or a full a la carte menu. There is also a vast wine list containing some impressively expensive vintages.

We recommend–From the tasting menu, we recommend sea urchin bisque with Laphroaig malt whisky, grilled baby leeks, delica pumpkin gnocchi, cuttlefish, and British shellfish. We also recommend a sea urchin tongue croquet, a slice of cured sea bass, smoked haddock, citrus jelly, a foie gras cube, port reduction, and carrots from Dunkirk with nougatine.
